Ultrasonic cutting can be used in many different industries, and it is also suitable for bakery industry. Ultrasonic bakery cutting does not require a sharp cutting edge, and it requires little pressure, which will not cause the edge breakage and damage of the cutting material. At the same time, due to the microscopic vibration, the friction resistance is very small, and the cutting material is not easy to stick to the blade. It is especially suitable for cutting viscous, elastic product and frozen products (such as frozen cheesecake, nougat etc.) or products that are inconvenient to pressurize. Ultrasonic cutting also has a great advantage, that is, while cutting, the cutting part has a fusion effect. The edges of the cutting part are intact to prevent loose tissues of the cutting material (such as crumbles).

Ultrasonic cutting horn in bakery cutting
Horns are made of different materials. They should be in good combination of ultrasonic and mechanical properties. Titanium has the best properties of the high strength alloys and its high fatigue strength enables it to withstand high vibration frequency. It also has a higher hardness and therefore more resistant to wear.
Horn design is not a simple process. Correct material must be selected, horns must be suitable for the required amplitude, and be accurately tuned to a specific frequency. Incorrectly tuned horns can cause damage to the transducer and/or generator.
